Seasonal Ingredients

Our menus are developed using seasonal produce sourced locally with most of our ingredients coming from the island itself. The Dulse & Brose name represents the locality of the restaurant and its focus on sea and land produce. Dulse is a type of Scottish seaweed and Brose is a Scots word for porridge.

Sourced Locally

We love to support the local community in everything we do. Being located in such a beautiful and flourishing part of Scotland means we have an abundance of produce available to us.

From locally sourced ingredients to beer brewed in one of the local breweries, we want our guests to discover the rich, fresh, and mouth-watering flavours that Skye has to offer. We work with local suppliers to source as much as we can, including food, drink, materials, fabrics and maintenance work.

Merchant Bar

In our Merchant Bar, you’ll find one of the island’s finest selections of Scottish gins and, of course, single malts. The award-winning Isle of Skye Brewery showcases three of their finest ales on tap alongside the much-raved about – also award winning – Thistly Cross farmhouse Cider.
